Been MIA recently, but struggling to get enough study and exercise done means there’s no time to hang around Tumblr…

Just a quick update though. Weighed myself last Friday and I lost another lb! Except I’m pretty sure I’ve gained weight back because of my period makes me want to eat constantly urgh. Exam stress + period cravings = I basically become a monster.

That is all. Will be done with exams next Wednesday! Can’t wait for all this to be overrrr.

Raw Vegan Pad Thai(Altered from Supercharged Food) 
Ingredients:
2 ribboned zucchinis2 ribboned carrots1 cup shredded cabbage1 red capsicum cut into thin strips 1 cups bean sprouts 2 shallots chopped 1 cup coriander chopped¾ cup chopped activated nuts (cashews, almonds). I used peanuts and almonds Dressing 1/2 cup low fat coconut milk 1 TBS Olive Oil 3 TBS soy sauce 2 ½ TBS tahini 2 TBS lemon juice 2 cloves garlic minced 1 red chilli cut fine 1 tsp grated ginger 6 drops liquid stevia Method: 1. Place all Pad Thai ingredients in a bowl and mix 2. Combine dressing ingredients in a jar and shake 3. Pour dressing over mixture to evenly coat 4. Serve with lime wedges, bean sprouts, coriander and activated almonds
